Sugar Free Zucchini Bread Recipe

As a homeschooling mama of 3 kiddos, plus a business owner, our days our full of adventure, learning, work, and lots of eating! 

Some weeks, I literally feel like my days are spent prepping food, and it feels like every meal time rolls right into a snack time, then another meal time, and it wears me out for sure! Not to mention that days like that leave no room for me to actually sit down and get work done either. 

Sugar Free Zucchini Bread Recipe

So, what really helps to make our week's work EZ-ER and run smoothly, is just a little weekend time spent in the kitchen to prep some food. 

Things like washing and chopping fruit and veggies for us to snack on, pre chopping vegetables for cooking, making some homemade snack items, or granola that we use for breakfast and snacking. Making sure we're stocked on Protein Cakes for EZ breakfasts that the kids can make themselves, and of course some homemade muffins or bread make a quick grab and go breakfast EZ too!

sugar free zucchini bread recipe



  • 1.5 cups grated zucchini (don't drain it)

  • 1/2 cup coconut sugar

  • 1/2 cup honey or maple syrup

  • 1/3 cup melted coconut oil

  • 1/2 cup unsweetened apple sauce

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 1/2 flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tsp ground cinnamon

  • *1/2 cup walnuts (optional)


Preheat the oven to 350 degrees, and use coconut oil to rub down a 9x5 bread loaf pan
In your mixer, add grated zucchini, coconut sugar + honey/maple syrup, applesauce, coconut oil, eggs, and vanilla. Mix together
Add in the flour, baking powder and soda, salt, and cinnamon. Mix until all is wet. 
Toss in nuts if you prefer
Pour the batter into the loaf pan, and back for 50-55minutes.
*You can also make this into muffins if that's easier
